100 pounds - Cuts and weights that can be expected from a typical 1/4 share include: Filet Mignon/Tenderloin 2-4 lbs, Ribeye and Strip Steaks 10 lbs, Sirloin Steaks 8-10 lbs, Variety Steaks 6 lbs, Round Roasts 8 lbs, 1/2 Brisket, Chuck Roasts 11 lbs, Short Ribs and/or Osso Buco 12 lbs, Ground Beef and/or Stew Meat 40 lbs.
