Pasture-Raised Chicken

We raise a slow growing breed of meat bird called the Imperial Red. These chickens provide a tender, juicy, gourmet flavor with more balanced proportions than the standard Cornish Cross. The leg quarters are larger and the breast quarter is less broad with a longer breastbone. Discriminating chefs believe that a chicken develops more flavor the longer it stays on the bone, and after raising both varieties, we are inclined to agree!
The chickens are raised in mobile tractors that house up to 30 birds. They are moved daily to fresh pasture, which keeps them clean, happy, and has had a remarkably beneficial effect on the soil and grasses here at the farm. In addition to the bugs and grasses they forage daily, they receive a ration of locally grown, non-GMO grain.
